Cacao Nut Butter with Cinnamon & Vanilla

I made this delightfully rich, yet not at all sweet Cacao Nut Butter after lunch today to have with a few strawberries for afternoon tea. It was the first time I made a nut butter in my new Vitamix and it turned out a treat so I’ve decided to share my recipe which is 100% paleo, (gluten free, sugar free, grain free, and dairy free too)!

This nut butter is made with Macadamia Nuts, which are a plant food and packed full of nutrients. Like olive oil, Macadamia Nuts are high in monounsaturated fats and contain antioxidants, which help maintain health and wellbeing, fibre to enhance digestive health, protein for energy, vitamins and minerals.

Macadamia Nuts are a highly favoured Paleo food, however, like anything you eat, moderation is key – just think if you actually had to shell them yourself  – it would actually take quite a looooooong time and you’d be overall less inclined to eat as many as you might today when they are so readily available in their pre-prepared, (or ‘shelled’ in this instance) form. It’s just something to keep in mind if you’re thinking about portion control.

I’ve added flavour to my nut butter with raw cacao powder, cinnamon and a scraped vanilla bean. You can use vanilla powder too, however beware of vanilla products which contain sugar and alcohol. Omit vanilla completely if you can’t find 100% vanilla, a.k.a. vanilla without additives.

There is no added sugar of any form in this blend, however, by adding six medjool dates, you’ll achieve a really nice sweetness. Taste it first though. You might find that it’s actually pretty good sugar-free, particularly when teamed with sweet fruit or added to a smoothie with a really ripe banana for example.

Alright – well here it – enjoy!


Makes 1 cup


  • Vitamix or equally powerful blender or processor


  • 2 cups raw macadamia nuts
  • 2 tbsp raw cacao powder
  • 1 tsp cinnamon
  • 1 vanilla bean scraped or 1 tsp vanilla powder
  • 1 small pinch sea-salt


  1. Add all ingredients to your Vitamix or other powerful blender/processor and whiz until a nut butter consistency is achieved.
  2. Transfer to a jar or airtight container.

Optional Extra -Six Medjool Dates

  • After step 2 – taste the nut butter. What do you think?
  • If you’d really rather a little sweetness, then do this: Add six pitted medjool dates. Whiz and taste again. Note – Dates are super sweet, so add two at a time and stop when you’ve achieved your desired sweetness.


Serving Suggestions

  • Use as a dipping sauce for fresh strawberries
  • Spread onto paleo pikelets (recipe coming soon…)
  • Make a smoothie with 1 banana, 1 cup almond milk, 1 date and 1 tbsp of this Cacao Nut Butter (omit extra date in smoothie, if dates have been added to the nut butter).
