This recipe is great if you can’t have nuts/nut butters and takes only minutes to assemble with next to no mess!

Last week, I was working on a uni assignment when I felt in need of a little ‘dessert’ after lunch (fast!). I was also keen to try out the new coconut butter I had purchased.  Wanting to make something, which would be ready almost immediately, I decided to pop a few teaspoons of that creamy coconut butter into a few already sweet and juicy Natural Delight Medjool Dates. For an extra little kick, I sprinkled some raw cacao nibs on top too!

I’ve used coconut butter (or ‘creamed coconut’ – from what I can see, the terms are interchangeable). Note, however, that coconut butter is not to be confused with coconut cream or coconut oil.  Coconut butter differentiates from coconut oil and cream, in that is comprises coconut flesh – its like the ‘nut butter’ of the coconut world!  It’s slightly off-white in colour and of very thick consistency and most often solidified. You could make your own coconut butter by whizzing dried coconut flesh in a food processor – similar to the way you’d make nut butter. I must admit, however, that this is a product that I do find easier to buy ready-made.

The Natural Delight Medjool Dates (not to be confused with dried dates!), which form the sweet, juicy, chewy and delicious shell around the coconut butter are from the Bard Valley in the USA. The growers co-op are passionate about their product which is evidence by the way they sustainably nurture their date palms 🌴  and harvest their crops. Natural Delight Medjool Dates are in the running with bananas 🍌 when it comes to serious sources of Potassium (great for work-out recovery people!) and although quite sweet, they are packed with fibre which enables slows energy release, therefore putting them in a lower GI category. It’s win-win all round when it comes to Natural Delight Medjool Dates!

So here is the recipes – it’s so easy – you’ll love it!

Makes 12


  • Ice–tray
  • Teaspoon


  • 12 Natural Delight medjool dates
  • 60ml (4 tbsp) coconut butter or creamed coconut
  • ½ tbsp coconut nibs



  1. Squeeze and remove the pits from each Natural Delight Medjool Date (date).
  2. Using your finger, make a hollow in each date, where the pit used to be. Do not pierce the sides or base.
  3. Stand the dates hole-side-up in an ice-cube tray.
  4. Fill each date with a tsp of coconut butter. Add a little more if they aren’t quite full to the top.
  5. Sprinkle the cacao nibs on top of each date.
  6. Place the tray of dates on a level surface in the freezer, allowing them 15 minutes to set before serving.




As coconut butter contains coconut oil, which has a low melting point, these little treats are best kept frozen until required. They will keep nicely in the freezer for up to 2 weeks.
