Carob and Cranberry Bliss Balls – Blissfully Pure Goodness
Because we’re moving house soon, I’ve been enthusiastically checking used-by dates, throwing out old food/mostly non-perishables at the back of the cupboard (so we have less to shift when the time comes). I’ve also been inventing new and improved treats with the fresh goodies that I do find too.
Today the ingredients I chose to use and finish were some cranberries, leftover from my Christmas baking and some Linseed Almond & Flaxseed meal (LSA) which I bought earlier this year.
I haven’t got many bliss balls recipes on the blog, so with this in mind, I set about turning these two ingredients into exactly that, using other leftovers including medjool dates, carob powder and the flesh from a fresh young coconut, which I’d bought and drunk at the Bondi Farmers Market on Saturday (yes, the flesh of open fresh young coconuts does keep, so don’t throw them out- always take them home to eat the flesh later!).
Anyway, so I pulled out my trusty Kitchenaid food processor and the rest is history – just whizzing, rolling and freezing. It’s as easy as can be and deliciously rewarding too!

- Foodprocessor/Thermomix
- Mixing bowl
- Small bowl
Ingredients
- 2 cups LSA meal
- 1/2 cup carob powder
- 1 tsp vanilla powder (or essense/extract)
- small pinch sea salt
- flesh of 1 young coconut
- 10 medjool dates, pitted
- 1 cup dried cranberries
- 1/2 cup desiccated coconut, for rolling
Method
- In a mixing bowl, add the dry ingredients, stirring to to combine: the LSA, carob powder, vanilla powder and sea salt. If using vanilla essence/extract, then wait to add with balance of the ingredients.
- Transfer the dry mixture to a food processor and add the young coconut flesh.
- One at a time, add the pitted medjool dates, then the cranberries and whiz to combine. It should form a dark slightly sticky dough.
- Roll into approximately 20 small balls, then roll in coconut.
- To firm, freeze in an airtight container for at least 2 hours.
Storage
Keep your Carob and Cranberry Bliss Balls stored, firm and fresh, in an airtight container in the freezer.
