Salted Caramel Peanut Butter Dream: just like Messina, only WAY healthier!

I had been dying to try something like this Salted Caramel Peanut Butter Dream a.k.a. paleo/vegan “ice-cream” since midday yesterday. Yep – it doesn’t take long for wicked ideas like this one to come to fruition. All you need is a super-powered machine like a Vitamix or Thermomix, or other high-powered blender and then, this too can be yours in a matter of seconds (provided you have all the right ingredients too!)!
The flavour is ridiculous. It reminds of a similar, completely taste-bud tantalising, yet offensively unhealthy, ice-cream flavour at the famous Messina gelateria, in Syndey. It’s like salted peanut butter caramel. For the same (but healthier) result, however, you need high-grade ingredients!
I’ve recently discovered and consequently been indulging in Mayvers Smooth Peanut Butter – it’s 100% roasted peanuts and a tiny bit of salt, which of course is where the peanutty saltiness comes from. If you use a salt-free 100% peanut butter, then just add a little sprinkle of sea salt to the recipe and you’ll be back on the right track.
Please avoid ALL Peanut Butters which contain anything other than Peanuts and Salt – they are no good for that exact reason. I’m talking ingredients like: vegetable oils, sugars, and ingredients comprised of numbers. They are cheaper to buy but this is only because of the volume of fillers and nasty even cheaper additives.
The bulk of this Salted Caramel Peanut Butter Dream is made of frozen bananas. Again, they need to be sweet and ripe before freezing – this is what makes it sweet and creamy.
I’ve used a little bit of my favourite Inside Out NG Coconut Milk, for little other purpose, than to help the Vitamix along – it’s a tough job smashing those frozen bananas! Again, it’s all about quality. Use any milk of your choice, but again, avoid anything which isn’t fresh and avoid all milks which contain more than two ingredients. My Inside Out NG Coconut Milk contains only coconut and water. These guys also make an Unsweetened Almond Milk, their first-ever product to reach the market. Consequently, it’s also off the charts amazing too!
I’ve also added some secret health promoting ingredients: bone broth cubes (completely flavour neutral and full of body/skin/hair/collagen-building goodness, as well as a serve of probiotic powder (beats mixing it with water!) If bone broth isn’t your thing or if you can’t make or get it, then just add a few regular ice cubes. The probiotic powder is also optional. Note and exceptional source of bone broth cubes is Star Anise Organics – at the Broth Bar in Bronte, where it’s made onsite.
- Vitamix Blender
- 2 frozen bananas, broken into chunks
- 2 broth cubes (OR 2 large ice-cubes for Vegan)
- 2 heaped tbsp quality peanut butter
- 2 tbsp coconut milk (or other nut milk)
- 1/2 tsp probiotic powder (optional)
- Place all ingredients in a Vitamix blender/Thermomix/ or other powerful blender/food processor.
- Whiz until completely, smooth and creamy.
- Pour into a serving bowl or glass.
- Top with extra roasted peanuts, then devour immediately!
